A rare species - Ostrea chilensis (closely related to the French Belon – Ostrea edulis) has been treasured in our country as a seasonal offering. Now hand raised in the cool, remote and unpopulated waters of Port Underwood in the Marlborough Sounds.
Our unique hanging culture (fully submerged) results in one of the fastest growing flat oysters characterised by high meat to shell ratios. With creamy plump meat and outstanding visual appeal, it offers a balanced crisp oceanic brine which is distinct and complex.
