We pack our oysters flat side up to retain the liquor (flavour of the bay). To retain the flavour and longevity, check on delivery to see they remain flat side up.
If stored at a temperature between 4-10° C in original packaging, they should remain fresh for a week from arrival at the destination. If any shells are open slightly, tap sharply. Any that do not close should be discarded immediately. They can be loosely covered with clean, damp paper towels or cloths to prevent them from drying out in the refrigerator.
- Store oysters in a sealed plastic bag or other airtight container
- Store oysters where they could freeze, or where temperatures will fluctuate widely in a warm place
- Store oysters submerged in melt-ice water or other standing water
